Directions

Step 1

  • Cut them into even-sized pieces for consistent cooking.

Step 3
Combine:
  • In a large bowl, toss the potatoes with olive oil, salt, pepper, and herbs.
Step 4
Roast:
  • Preheat oven to 425°F
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast for 20 minutes.
  • Add the smashed garlic cloves to the pan.
  • Roast for another 15-20 minutes, or until golden brown and tender
