  • 12 ounce bag gluten free tortilla chips
  • 1 pound ground turkey
  • 1/2 cup diced bell pepper
  • 1/2 cup onion
  • 1/2 cup diced Roma tomatoes
  • 1/4 cup cilantro
  • 2 tablespoons gluten free taco seasoning
  • 1/2 cup of refried beans (omit if wanted)
  • 1/2 cup plain greek yogurt
  • 8 ounces of your favorite grated cheese (cheddar or Monterrey Jack melts well)
  • 1/2 lime
  • Salsa and Guacamole to serve

Directions

Step 1
Preheat the oven to 400 degrees. Brown ground turkey and stir in taco seasoning, set aside.
Step 2
In a 13×9 baking dish, spread tortilla chips evenly. Sprinkle ground turkey evenly over chips.
Step 3
Drop dollops of refried beans over ground turkey. Sprinkle the bell pepper and onion. Sprinkle grated cheese on top evenly.
Step 4
Bake for about 20 minutes or until the cheese is melted.
Step 5
Top with roma tomatoes, cilantro, and dollops of greek yogurt.
Step 6
Squeeze half a lime over. Serve with salsa and guacamole. Tip – layer chips and toppings before putting in over to create a stacked nacho.
